For three generations, the Battaglinis have been cultivating their olive groves in central Italy, situated the gentle slopes surrounding the magnificent Lake Bolsena, a crater lake formed hundreds of thousands of years ago by volcanic activity. The rich soil, moist air, and mild climate infuse the olives with flavor and robust health. Three varieties of olives are used to make this full-bodied, smooth extra-virgin oil that imparts a fresh, fruity flavor contrasted by delicately pungent and bitter nuances.

Use this to anoint prepared and cooked foods. Or drizzle it over slices of cheese and fresh fruit, and use it on crudites and crunchy, raw vegetable salads.
