INGREDIENTS
- 20 fingerling potatoes
- ˝ cup flat parsley, rough cut
- 2 tablespoons butter
DIRECTIONS
- In a large pot, boil the potatoes for 20-25 minutes until they are cooked through. To test for doneness, a fork should easily pierce the potatoes.
- When done, drain the potatoes well.
- Cut each potato in half and put them in a serving bowl.
- Add the parsley and butter. Mix gently and serve immediately.
