Boiled Potatoes with Parsley

INGREDIENTS

  • 20 fingerling potatoes
  • ˝ cup flat parsley, rough cut
  • 2 tablespoons butter

DIRECTIONS

  1. In a large pot, boil the potatoes for 20-25 minutes until they are cooked through. To test for doneness, a fork should easily pierce the potatoes.
  2. When done, drain the potatoes well.
  3. Cut each potato in half and put them in a serving bowl.
  4. Add the parsley and butter. Mix gently and serve immediately.
