Bolognese Sauce

Serves: 4

INGREDIENTS

  • 1/2 pound ground veal
  • 1/2 pound ground beef
  • 1/4 cup Fairway Extra Virgin Olive Oil
  • 3 garlic cloves
  • 4 celery ribs, finely diced
  • 1 large Spanish onion, peeled and finely diced
  • 2 cups dry red wine
  • 1 pint tomato sauce
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup heavy cream (optional)
  • Fairway Sea Salt to season
  • Parmigiano Reggiano to finish

DIRECTIONS

  1. Heat a pan with 2-3 tablespoons of olive oil over medium heat.
  2. When the pan is good and hot, add the veal and beef and cook until browned.
  3. When browned, remove it from the pan, drain the excess oil and reserve the meat on the side.
  4. Add 3 more tablespoons of olive oil to the same pan and add the garlic. Cook the garlic for 1 minute but do not brown.
  5. Add the onions and celery to the garlic and cook slowly for 20 minutes, again without browning.
  6. When the vegetables are very tender, add the browned meat back to the pan.
  7. Immediately add the red wine and cook to reduce the liquid by half.
  8. Add the tomato sauce to moisten the meat mixture and slowly cook for 50 min.
  9. Add dry red pepper flakes, heavy cream (if desired) and salt to taste.
Chef’s Note: You can serve this hearty and yummy sauce over so many things! Polenta, pasta and as a Sloppy Giuseppe are all fantastic ways to enjoy this easy sauce. It’s up to you!
