INGREDIENTS
- 1/2 pound ground veal
- 1/2 pound ground beef
- 1/4 cup Fairway Extra Virgin Olive Oil
- 3 garlic cloves
- 4 celery ribs, finely diced
- 1 large Spanish onion, peeled and finely diced
- 2 cups dry red wine
- 1 pint tomato sauce
- 1/4 teaspoon red pepper flakes
- 1/4 cup heavy cream (optional)
- Fairway Sea Salt to season
- Parmigiano Reggiano to finish
DIRECTIONS
- Heat a pan with 2-3 tablespoons of olive oil over medium heat.
- When the pan is good and hot, add the veal and beef and cook until browned.
- When browned, remove it from the pan, drain the excess oil and reserve the meat on the side.
- Add 3 more tablespoons of olive oil to the same pan and add the garlic. Cook the garlic for 1 minute but do not brown.
- Add the onions and celery to the garlic and cook slowly for 20 minutes, again without browning.
- When the vegetables are very tender, add the browned meat back to the pan.
- Immediately add the red wine and cook to reduce the liquid by half.
- Add the tomato sauce to moisten the meat mixture and slowly cook for 50 min.
- Add dry red pepper flakes, heavy cream (if desired) and salt to taste.
Chef’s Note: You can serve this hearty and yummy sauce over so many things! Polenta, pasta and as a Sloppy Giuseppe are all fantastic ways to enjoy this easy sauce. It’s up to you!
