Nothin' like it. I'm writing the mayor to ask him to change "The Big
Apple" to "The Big Steak."
What is the difference between a meat counter and a butcher shop? The butcher.

died out in the late '60s, except for Ray, who lives on, right here at
Fairway. The guy is an impossible fanatic. He selects primals, veal,
pork, ham, chicken and turkey right at their source. He buys more prime
beef than anybody on the planet - more than Peter Luger's buyer, more
than the Palm's or Ruth's Chris' buyer, more than Lobel's. The result
of THAT fact is Ray gets first dibs.
He has taught his counter guys to cook. He has also taught them to bend
over backwards to make you happy. You want us to bone that chicky?
Done. You want that crown roast frenched? Done. You want your chopped
meat a certain way? Done.
Ray pioneered USDA-certified organic beef from Australia, veal
pastrami, organic pork from Quebec, high-end kosher meat and poultry,
all cut fresh on the premises. We get around. We look at a lot of meat
and poultry retailers, and no place - neither here in the US nor in
Europe - does it as good as Ray. Some folks call us that "Fair-Ray".
RAY VENEZIA
I am the Vice President of Meat for Fairway Market. I am a
third-generation butcher bringing twenty-seven years of experience in
retail food expertise to Fairway, having devoted my entire career to
fresh meat and poultry operating, purchasing and merchandising. Hired
by Fairway in 1997, I have been responsible for the success of the
department in the Harlem store as well as the introduction of the meat
and poultry operation in the flagship Broadway store. The meat world
recognizes me as the pioneer of the industry's fastest growing
categories - organic and kosher products, several of which are sold
exclusively at Fairway. Under my guidance, the Fairway meat department
is enjoying a rapidly growing, on-premises fresh kosher meat operation
under strict rabbinical supervision. We at Fairway Market are the
proving ground for the entire meat industry.
