As with all authentic balsamic vinegar (aceto balsamico) of Modena, this vinegar is made from the juice of the white and sugary Trebbiano grape that’s boiled down into a concentrated must (unfermented juice) that is aged in wooden barrels for a period of years. As if that wasn’t special enough, this one is also kosher for Passover, and carries the IGP (Indicazione Geografica Protetta or Indication of Geographical Protection) status to certify where this product originates.
