Serves:
INGREDIENTS
- 3 cups of sugar
- 3 cups of cashews
- Fairway Sea Salt to taste
DIRECTIONS
- In a heavy pot, add the sugar and caramelize over a medium low flame for 20 minutes, stirring every couple of minutes.
- When the sugar begins to caramelize lower the heat a little.
- Add the nuts to the pot. Now you have to work very quickly because the sugar hardens very quickly.
- Pour the mixture on a silicon pad or buttered sheet pan and spread it evenly with a spatula.
- Let it sit for 30 minutes to cool and harden.
- Sprinkle some sea salt on top, crack into pieces and eat.
Chef’s Note: You can substitute other nuts for the cashews such as peanuts and almonds. You can also add your favorite dried fruits to create a trail bar. Pack them up and take them with you.
