INGREDIENTS
- 6 sweet chicken sausages
- 6 spicy chicken sausages
- 1/8 cup Fairway Extra Virgin Olive Oil
- 12 red cherry peppers, halved with seeds removed
- 6 green jalapenos, halved with seeds removed
- 6 red jalapenos, halved with seeds removed
- 6 serrano peppers, split in half lengthwise with seeds removed
- 3 poblano peppers, quartered with seeds removed
- 1 red bell pepper, cut in eighths with seeds removed
- 1 green bell pepper, cut in eighths with seeds removed
- 2 peeled Spanish onions, quartered
- 6 garlic cloves (crush garlic in skin, then remove the skin)
- Fairway kosher salt
- Fairway black pepper
- 6 hoagie rolls
DIRECTIONS
- Preheat your oven to 450 degrees.
- Place sausage in a roasting pan, drizzle some of the olive oil, and mix.
- Place in oven and roast for 15 to 20 minutes.
- In a large bowl, mix the peppers, onions, garlic, remaining olive oil, salt, and pepper, and set aside.
- Take the sausage out of the oven, place in a bowl, and set aside.
- Place the pepper, onion, and garlic mixture in the same pan you used for the sausage, and roast for 20 to 25 minutes, or until charred.
- Take the pan out of the oven, add the sausage, mix with vegetables, and roast for 5 more minutes in the oven.
- Remove from oven, and place two sausages on each hoagie roll. Then top with peppers and onions.
