Sausage & Pepper Hoagies

Serves: 6

INGREDIENTS

  • 6 sweet chicken sausages
  • 6 spicy chicken sausages
  • 1/8 cup Fairway Extra Virgin Olive Oil
  • 12 red cherry peppers, halved with seeds removed
  • 6 green jalapenos, halved with seeds removed
  • 6 red jalapenos, halved with seeds removed
  • 6 serrano peppers, split in half lengthwise with seeds removed
  • 3 poblano peppers, quartered with seeds removed
  • 1 red bell pepper, cut in eighths with seeds removed
  • 1 green bell pepper, cut in eighths with seeds removed
  • 2 peeled Spanish onions, quartered
  • 6 garlic cloves (crush garlic in skin, then remove the skin)
  • Fairway kosher salt
  • Fairway black pepper
  • 6 hoagie rolls

DIRECTIONS

  1. Preheat your oven to 450 degrees.
  2. Place sausage in a roasting pan, drizzle some of the olive oil, and mix.
  3. Place in oven and roast for 15 to 20 minutes.
  4. In a large bowl, mix the peppers, onions, garlic, remaining olive oil, salt, and pepper, and set aside.
  5. Take the sausage out of the oven, place in a bowl, and set aside.
  6. Place the pepper, onion, and garlic mixture in the same pan you used for the sausage, and roast for 20 to 25 minutes, or until charred.
  7. Take the pan out of the oven, add the sausage, mix with vegetables, and roast for 5 more minutes in the oven.
  8. Remove from oven, and place two sausages on each hoagie roll. Then top with peppers and onions.
