INGREDIENTS
- 1 tablespoon Fairway Extra Virgin Olive Oil
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 orange bell pepper, diced
- 4 Fairway Butcher Shop chicken and veggie burger patties
- 1 large can (28 ounces) Fairway chopped tomatoes
- 1 can red kidney beans, drained and rinsed
- 1 can black beans, drained and rinsed
- 1 can refried beans
- 3/4 bottle of beer
- 3 tablespoons Fairway chili powder
- 1 tablespoon Fairway cumin
- Fairway kosher salt
- Shredded Cheddar cheese
DIRECTIONS
- In a large pot, heat oil, and add the diced peppers to saute them until they start to wilt and soften (about 5 minutes).
- Break up the patties, add the meat to the pot, and brown it (about 5 minutes).
- Add chopped tomatoes, the beans, and the beer (the alcohol in the beer will burn off during cooking).
- Stir well, add spices and salt, and stir again.
- Bring to a slight simmer, stirring frequently.
- Lower heat and cook for 30 minutes.
- Serve with shredded Cheddar cheese.
