Chicken & Veggie Chili

Serves: 4

INGREDIENTS

  • 1 tablespoon Fairway Extra Virgin Olive Oil
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 orange bell pepper, diced
  • 4 Fairway Butcher Shop chicken and veggie burger patties
  • 1 large can (28 ounces) Fairway chopped tomatoes
  • 1 can red kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 can refried beans
  • 3/4 bottle of beer
  • 3 tablespoons Fairway chili powder
  • 1 tablespoon Fairway cumin
  • Fairway kosher salt
  • Shredded Cheddar cheese

DIRECTIONS

  1. In a large pot, heat oil, and add the diced peppers to saute them until they start to wilt and soften (about 5 minutes).
  2. Break up the patties, add the meat to the pot, and brown it (about 5 minutes).
  3. Add chopped tomatoes, the beans, and the beer (the alcohol in the beer will burn off during cooking).
  4. Stir well, add spices and salt, and stir again.
  5. Bring to a slight simmer, stirring frequently.
  6. Lower heat and cook for 30 minutes.
  7. Serve with shredded Cheddar cheese.
