Our meat department is an area where we always go the extra mile. Whether you’re a trained chef, a savvy cook, a master of the grill, or a novice, ensuring that you have a high-quality, great tasting piece of meat is the beginning and end to what you need for a fantastic meal.
In the past, before markets became “super”, and you would never buy your milk and bread in the same place as your t-shirts, people depended on the expertise of the neighborhood butcher. Trust was crucial – trust that the meat was fresh, of high quality, cut the right way, a great value, and that you were receiving good advice. The butcher’s goal was to see you succeed; he loved to hear about dinner in your home, how you prepared the meat, and what new things you were interested in trying. “We’re all focused on a common goal: to do the right thing for the customer,” says Dennis Bland, Fairway Market's Vice President of Meat and Seafood Operations. The right thing means meat we select, butcher, and package ourselves.
The first and main rule for the meat department team is that they only source and sell meat that they themselves would buy for their families. In order to be sure that all of our meat is up to par, every single piece of meat is inspected by a meat department team member. All of our Fairway label, non-kosher meat is butchered and packaged in-house. This ensures peak freshness of the meat, proper packaging, and approval of someone who knows what a superior cut of meat looks like. All of the meat in every Fairway Market is USDA inspected. Additionally, we carry a full range of USDA Prime Beef cuts; only 2% of meat is graded USDA Prime, and Fairway Market makes it affordable 100% of the time. Do not be mistaken by gimmicks of “prime” in other stores; USDA Prime is the real deal, with superior marbling, tenderness, juiciness, and taste.
WE’RE FRESH, AND WE MAKE NO BONES ABOUT IT
But how do we keep our meat so fresh? First, superior meat is delivered to each Fairway Market every single day – that’s 7 days a week, 365 days a year – and it is cut, packaged, and out at the Butcher Shop counter all within 24 hours of receiving. Second, the meat department team scrutinizes all of the meat that comes into the stores. The fresh meat you get from each Fairway Market has never been stored or stagnant. Additionally, all of our poultry comes packed on ice – chickens as fresh as the dickens we like to say. Now that’s fresh.
SPECIALTY MEATS? WE HAVE THEM
As Fairway Market has been growing, so has our customer base. Many different kinds of people from different walks of life come to visit us and we strive to please all of you. In terms of staying ahead of the trends – so far ahead, in fact that we didn't even know it was trendy, we just knew it was good for you – we have offered grass-fed OBE organic beef since the late 90’s. OBE beef is from a dedicated group of ranchers in Australia, it is USDA inspected, organic, and 100% grass-fed. In nature, cows don’t eat grain. Knowing this, it was only reasonable to investigate the benefits of grass-fed beef. It is leaner, high in omega-3, delicious, and all-natural. Overall, we carry a lot of cuts of meat that other stores don’t bother to provide, because it can be time consuming and costly. But we value the “obscure” request, and we are always more than happy to custom-cut anything you want. Looking for a treat? As if that weren’t enough, we also dry age our USDA Prime Beef on the premises of many of our stores. Dry-aging improves the flavor, texture and tenderness of the meat, improving even further on the best meat available. Serve it at your next BBQ and you’re certain to become a culinary hero.
KOSHER MEAT? WE HAVE THAT, TOO
With our kosher meat selection, we simply apply the same high standards as we do for our non-kosher meat. Our kosher meat is under the supervision of Rabbi Avrohom Marmorstein, and is KOF-K Certified. We cut and package our kosher meat in-house and offer the same custom-cutting option for our kosher customers.
