WE’RE FRESH, AND WE MAKE NO BONES ABOUT IT

How do we keep our meat so fresh? First, superior meat is delivered to each Fairway Market every single day – that’s 7 days a week, 365 days a year – and it is cut, packaged, and out at the Butcher Shop counter all within 24 hours of receiving. Second, the meat team scrutinizes all of the meat that comes into the stores. The fresh meat you get from each Fairway Market has never been stored or stagnant. All of our poultry comes packed on ice. Now that’s fresh.

DRY-AGED PRIME BEEF IS MAGIC

dry_agedVery, very few outfits commit the enormous time, energy, money, and care needed to bother dry-aging beef. At Fairway, we’re deeply passionate about the craft of craft of dry-aging. Why bother? Because the finished product is nothing short of astounding. We start with whole sub-primals—large cuts of meat with bones fully intact. We age them uncovered in temperature, humidity, and air speed-controlled rooms. The fine-tuned control allows dry-aging to do its thing without the meat spoiling. And we use USDA Prime beef–the highest grade a cut of beef can receive. Experience the excruciatingly delicious flavor, outrageous umami brilliance, and tenderness of our USDA Prime Dry-Aged steaks. GROUND BEEF AND HOUSEMADE SAUSAGES

The benchmark for every butcher department is first and foremost the quality and freshness of its ground meat. Your Fairway butcher offers you the cleanest, best-tasting ground beef that exists. The chopped meat from our own trim, ground by our own butchers all day, every day. We make our own fresh our own fresh sausage each and every day, in each and every store, from the freshest ingredients and traditional recipes that have been passed down for generations. Our traditional sausage starts off with the best selection of western corn-fed pork, hand-trimmed and chilled to keep it nice and cool through the blades of the grinder. It is ground only once. Sausage making is an art; and we’re proud to say we’ve mastered it.

FROM ORGANIC TO GRASS-FED TO SPECIALTY CUTS…WE HAVE IT ALL

cooked_meatWe stay ahead of the trends – so far ahead, in fact that we don’t even know what will be trendy, we just know what’s great. We have offered grass-fed OBE organic beef since the late 90’s. OBE beef is from a dedicated group of ranchers in Australia, it is USDA inspected, organic, and 100% grass-fed. We are proud to sell super-flavorful American lamb, and come Thanksgiving, beautiful heritage-breed turkey. We carry many unusual cuts of meat that other stores don’t bother to provide,like the super-flavorful boneless chuck boneless chuck flaptail because they can be time consuming and costly. We value the “obscure” request, and we are proud to offer a vast array of great poultry and meat.

KOSHER MEAT? WE HAVE THAT, TOO

We believe those who eat kosher should have incredibly high-quality meat available! Our kosher meat is under the supervision of Rabbi Avrohom Marmorstein, and is KOF-K Certified. We cut and package our kosher meat in-house and offer custom-cutting for our kosher customers.
