The Fallot family knows how to keep a secret. They’ve kept their recipe for this mustard under close guard since 1840 when they started making artisanal mustards in Burgundy. We do know that this tantalizing condiment is made from a beautifully melded blend of mustard seeds with verjus -- an acidic juice made from unripe grapes -- and roughly ground using a traditional stone mill that allows the condiment to retain its flavor. Rich and nutty, this coarse grain mustard has a delicious mouth-puckering finish.
Spread this on a sandwich or mix into tuna salad for a peppery sensation. Add this mustard to BBQ sauces or make sauces for salmon and chicken. Add to marinades or vinaigrettes, rub into proteins, and make finishing toppings for grilled vegetables like asparagus.
