The Italian region of Tuscany is famous for producing excellent wines, and that’s why we went there in search of a vino that would age perfectly to yield a fragrantly complex and rich vinegar. Grapes are simmered slowly and reduced to a liquid which rests in oak barrels for three years absorbing delicate flavor and aroma as it gradually thickens into this exquisite, beautifully pale-colored, white wine vinegar.
