During this time, the vinegar is transferred from kegs made of oak to those made of juniper, mulberry, and chestnut, absorbing the fragrant characteristics of each wood and maturing into a full-bodied, beautifully brunette, robust vinegar that imparts a perfect balance of delicate sweetness with a puckering bite.
