Fairway Markets Lobster Rolls

Serves: 4

INGREDIENTS

  • 2 2lb. lobsters
  • 2 ribs celery, diced
  • 1/4 cup chives, finely chopped
  • 1 tablespoon red onion, finely chopped (optional)
  • 1/3 cup mayonnaise
  • pinch cayenne pepper
  • 4 hot dog buns
  • butter for buns

DIRECTIONS

  1. Add one inch of water to a pot with a lid that is big enough to hold both lobsters (or you can cook one at a time) and bring it to a rapid boil.
  2. Place the lobsters in the pot and cover.
  3. Lower the heat, but keep it high enough to keep the water boiling.
  4. Steam the lobsters for no more than 15 minutes.
  5. Remove the lobsters from the pot and allow them to cool.
  6. Remove the meat and chill well. DO NOT rinse the meat under cool water to chill.
  7. Shred the meat with your fingers into a bowl.
  8. Add the celery, chives, optional red onion, and mayonnaise and mix together. Finish with a pinch of cayenne pepper.
  9. Toast and butter your buns. This is best accomplished on a griddle. Butter the buns and then toast them on the griddle.
  10. Pile on your lobster salad and enjoy!
