Although Molise, a region in northern central Italy, is not known for quantities of olives, we went in search for something special and the resultant oil is considered some of the best in the country. (This oil is kosher, too.) Buttery and verdant, emitting a strong vegetal fragrance, this rich and sumptuous oil strikes a perfect balance of sweet and slightly bitter flavors. Your palette will be enveloped by a lovely creaminess that submits to a pleasant peppery finish.

Use this all-purpose olive oil in marinades for beef, poultry, and fish, or drizzle in on salads, fruits and cheeses. It makes a wonderful chief ingredient in vinaigrettes and bastes, or simply pour it liberally into a bowl for dipping bread and crudites.
