Star anise, sometimes called Chinese star anise, blooms from hearty evergreen trees in the southwest of China, a region that is shielded from the harsh winters of the north. Very similar in flavor to anise, star anise has become a popular and conveniently less expensive substitute in the west, where it’s widely used in tea and liquor production. We add just a touch of it in our Chinese Five Spice. Often compared to fennel in flavor, this spice is warm and sweet with a licorice-like taste that’s wonderfully cozy in piping hot carrot and squash soups. Simmer star anise in stews and fruit compotes seasoned with cinnamon and nutmeg, but remember to remove it before serving.

Fairway Marketplace is brought to you by Fairway Market, a specialty food chain that started back in 1933 with a small fruit and vegetable stand on the Upper West Side of Manhattan. Today, Fairway Market is legendary for its experts and expertise in all things food, and a relentless obsession with quality throughout all of the different departments in its stores. In December of 2011, Fairway launched this online shop, so that we could bring the best of the best of what Fairway offers, at the same great values, to those who don’t live near one of our stores. Why keep all of this foodie goodness to ourselves? That simply would not be fair.
