This extraordinary “novello,” or early harvest, oil is exclusive to Fairway; it has been decanted, but not filtered at our express request so that the vibrant, ripe flavors and expressive aromas are carefully preserved. Crafted in Cordoba, a southern region in Spain, this oil is cultivated at a unique family grove run by Jose Antonio Luque, who vigilantly tends to his young trees -- none older than 20 years, and each planted and grown under strict certified organic regulations. Citrus aromas emanate from the oil, punctuated with notes of green tomato and ripe fruit. You’ll detect verdant, lively, ripe flavors of cooked artichoke and tomatoes, with just a touch of puckering bitterness.

Use this an as all-purpose oil on salads and in vinaigrettes, in marinades for meat, seafood, or poultry, or try it as a table condiment for fruit, cheeses, and veggies.
