INGREDIENTS
- 4 medium zucchini, sliced ½ inch thick
- 2 cloves garlic, crushed
- 1 small red onion, finely chopped
- 1 tablespoon dried chili pepper flakes
- 2 tablespoons flour
- Fairway Extra Virgin Olive Oil
- Fairway Kosher Salt to taste
DIRECTIONS
- Mix the onion, garlic and chili pepper together in a bowl.
- Add ¾ inch of olive oil to a heavy pan and heat to 375 degrees.
- Add the flour to a bowl and toss in the zucchini.
- Shake off the excess flour and place them in the hot oil.
- Let the zucchini sit for 3-4 minutes.
- After 3 – 4 minutes, move the zucchini around so it cooks evenly, and continue to fry for another 3 – 4 minutes.
- When the zucchini slices are golden brown, take them out of the pan with a slotted spoon and place them directly into the bowl with the onion, garlic and pepper and mix.
- Sprinkle them with the kosher salt to taste.
- Serve at room temperature or slightly chilled.
