Fried Zucchini

Serves: 4

INGREDIENTS

  • 4 medium zucchini, sliced ½ inch thick
  • 2 cloves garlic, crushed
  • 1 small red onion, finely chopped
  • 1 tablespoon dried chili pepper flakes
  • 2 tablespoons flour
  • Fairway Extra Virgin Olive Oil
  • Fairway Kosher Salt to taste

DIRECTIONS

  1. Mix the onion, garlic and chili pepper together in a bowl.
  2. Add ¾ inch of olive oil to a heavy pan and heat to 375 degrees.
  3. Add the flour to a bowl and toss in the zucchini.
  4. Shake off the excess flour and place them in the hot oil.
  5. Let the zucchini sit for 3-4 minutes.
  6. After 3 – 4 minutes, move the zucchini around so it cooks evenly, and continue to fry for another 3 – 4 minutes.
  7. When the zucchini slices are golden brown, take them out of the pan with a slotted spoon and place them directly into the bowl with the onion, garlic and pepper and mix.
  8. Sprinkle them with the kosher salt to taste.
  9. Serve at room temperature or slightly chilled.
