INGREDIENTS
- 1 Cornish game hen, butterflied – your local Fairway Market butcher can do this for you
- 1/4 cup extra virgin olive oil
- 1 clove garlic, crushed
- 2 Thai chili peppers, crushed
- Juice of 2 limes
- Zest of 1 lime
- Salt and pepper to taste
- 3 sprigs cilantro to garnish
DIRECTIONS
Marinade
- Mix the olive oil, garlic, chili peppers, lime juice, lime zest and salt and pepper together for the marinade.
- Marinate the cornish game hen for at least 24 hours, and up to 48 hours.
Grilling Outdoors
- Place the hen skin side down in the middle of the grill for 10-15 minutes over medium heat.
- Flip the hen over, placing it on the side of the grill. Grill for 10-15 minutes more.
- Place the hen on a serving plate and garnish with cilantro and a squeeze of lime.
Grilling Indoors
- Heat a heavy, oven-safe grill pan with a few tablespoons of olive oil.
- When it is at medium heat, place the hen skin side down in the pan and grill for 15 minutes.
- Meanwhile preheat an oven to 475 degrees.
- Flip the hen over and place the pan in the warm oven for 10 more minutes.
- Place the hen on a serving plate and garnish with cilantro and a squeeze of lime.
