Grilled Porterhouse Steak with Fresh Herbs

Serves: 2-3

INGREDIENTS

  • 2½ - 3 lb porterhouse steak
  • Fresh Herb Mix (recipe below)

DIRECTIONS

  1. Heat your grill on high heat.
  2. Grill the porterhouse for 3-4 minutes per side.
  3. Move steak away from the center of the grill and cook 3-4 minutes more on each side.
  4. Remove from grill, let rest for 10 – 15 minutes and serve with Fresh Herb Mix.

 

Fresh Herb Mix

INGREDIENTS

  • 1 tablespoon fresh rosemary
  • 1 clove garlic, smashed
  • 12 fresh basil leaves
  • 1 tablespoon fresh chives
  • 4 sprigs fresh flat leaf parsley
  • ¾ cup Fairway extra virgin olive oil
  • Fairway Sea Salt and Fairway Tellicherry Pepper to taste

    DIRECTIONS

  1. Smash the garlic and chop the fresh herbs.
  2. In a bowl, mix the garlic, herbs, olive oil, salt and pepper all together.
  3. Drizzle the fresh herb mix over the steak to finish.
