INGREDIENTS
- 1 lb USDA Prime Hanger Steak
- 1 tablespoon Fairway Extra Virgin Olive Oil
- 1 sprig rosemary, chopped
- 1 clove garlic, peeled, thinly sliced
- 1 pinch Fairway Sea Salt
- 1 crack Fairway Tellicherry Pepper
- Dijon mustard for serving, if desired
DIRECTIONS
- In a shallow baking dish or pan, cover the steak with the olive oil, rosemary and garlic.
- Rub the steak with the salt and pepper and let it marinate for 1-3 hours.
- Once the steak is marinated, heat a cast iron pan to just before smoking.
- Place the steak in the pan and let it sit without moving it for 2 minutes.
- Turn the steak over and let it cook for another 2-3 minutes for medium rare.
- Finish with sea salt sprinkled over the top.
- Serve with a little Dijon mustard on the side.
Chef’s Note: You can also prepare this dish outdoors on the grill. USDA Prime Hanger Steak is at its best when served medium rare.
