Simple Hanger Steak

Serves: 2

INGREDIENTS

  • 1 lb USDA Prime Hanger Steak
  • 1 tablespoon Fairway Extra Virgin Olive Oil
  • 1 sprig rosemary, chopped
  • 1 clove garlic, peeled, thinly sliced
  • 1 pinch Fairway Sea Salt
  • 1 crack Fairway Tellicherry Pepper
  • Dijon mustard for serving, if desired

DIRECTIONS

  1. In a shallow baking dish or pan, cover the steak with the olive oil, rosemary and garlic.
  2. Rub the steak with the salt and pepper and let it marinate for 1-3 hours.
  3. Once the steak is marinated, heat a cast iron pan to just before smoking.
  4. Place the steak in the pan and let it sit without moving it for 2 minutes.
  5. Turn the steak over and let it cook for another 2-3 minutes for medium rare.
  6. Finish with sea salt sprinkled over the top.
  7. Serve with a little Dijon mustard on the side.
Chef’s Note: You can also prepare this dish outdoors on the grill. USDA Prime Hanger Steak is at its best when served medium rare.
