We are stunned by the power, the presence, the joy of this Italian extra virgin olive oil, because of its immediate attack of early-harvest incipient bitterness, an attribute we seek in our favorite olive oils. Our joy compounds with the sweet, ripe-fruity aroma that billows right out of the bottle, and then comes the sweetly complex middle-journey across our palate, flavors too numerous to list; and finally, the big black-pepper finish. It's a D.O.P. name-protected oil that hails from Umbria's Colli-Assisi and Spoleto area. And as if that wasn't impressive enough, it's 100 percent USDA-certified organic, biodynamic, and kosher, and is made 100 percent with Moraiolo olives, grown by the Ciampetti family, in the hills of the town of Spello, an ancient place rich in history and heritage. After the olives are picked, they're kept at a controlled temperature between 57.2 degrees F and 68 degrees F before their oil is extracted within six hours of harvesting, producing an unctuous green oil brushed with shades of golden yellow.

Extremely versatile, this rich oil pairs with a range of bites, including bruschetta, barbecue, roasts, bean soups, fresh celery salads, grilled mushrooms, pasta and beans, spinach, radish salads, sauteed garlic dishes, beef carpaccio, boiled vegetables, and vegetable soups like potato and leek soup.
