INGREDIENTS
- 1 lb Kumato Tomatoes
- 1/3 red onion, peeled and slivered
- 1/4 assorted Fairway Olives
- 2 cups Baby Arugula Pinch of Oregano and Fairway Mediterranean Sea Salt to taste
- Pineau vinaigrette: Whisk ingredients
- 3 parts Fairway Baena EVOO to 1 part Pinaud Des Charentes Red Wine Vinegar
DIRECTIONS
- Combine all salad ingredients in a large bowl.
- Toss with vinaigrette and finish with oregano and sea salt.
- Arrange on indivual plates or serving platter immediately to help reserve the delicate arugula leaves.
