Kumato Salad with Pineau Des Charentes Vinaigrette

INGREDIENTS

  • 1 lb Kumato Tomatoes
  • 1/3 red onion, peeled and slivered
  • 1/4 assorted Fairway Olives
  • 2 cups Baby Arugula Pinch of Oregano and Fairway Mediterranean Sea Salt to taste
  • Pineau vinaigrette: Whisk ingredients
  • 3 parts Fairway Baena EVOO to 1 part Pinaud Des Charentes Red Wine Vinegar

DIRECTIONS

  1. Combine all salad ingredients in a large bowl.
  2. Toss with vinaigrette and finish with oregano and sea salt.
  3. Arrange on indivual plates or serving platter immediately to help reserve the delicate arugula leaves.
