Lamb Kabobs with Yogurt Sauce and Summer Corn Salad

Note: Allow enough time for the lamb
to marinate overnight.

INGREDIENTS

  • 1 1/2 lb leg of lamb, cut in 1 inch cubes
  • 2 tablespoons olive oil
  • 2 cloves garlic, smashed
  • 2 bunches scallions, white parts finely minced
  • 12 cherry tomatoes, red and yellow
  • 1 red pepper, cut in 1 inch squares
  • 1 yellow pepper, cut in 1 inch squares
  • 2 red onions, cut in 1 inch squares
  • 8 shitake mushrooms, stems removed
  • Fairway Sea Salt and Fairway Tellicherry Pepper to taste
  • Yogurt sauce (recipe below)

DIRECTIONS

  1. Put the cubed lamb in a bowl. Add the olive oil, garlic, scallions, salt and pepper and let marinate overnight in a resealable plastic bag or airtight container.
  2. Once the lamb is properly marinated, take the lamb cubes and vegetables and build the skewers alternating between the two.
  3. Heat your outside grill to medium high, or you can use a grill pan on your stove.
  4. Place the skewers on the grill and let them cook for 1 minute.
  5. Turn skewers over and let cook for another minute.
  6. Continue turning the skewers over every minute for 7-8 minutes total. If they are getting charred, move them over to the side of the grill.
  7. Spoon some corn salad onto each plate (recipe below) and place skewers on top.
  8. Serve with yogurt sauce on the side.

Summer Corn Salad

INGREDIENTS

  • 6 ears corn
  • 1/3 bunch chives, diced
  • Juice from 1/2 lemon
  • 2-3 tablespoons olive oil
  • 1 tomato, diced with the seeds removed
  • 1/4 red onion, finely diced
  • Fairway Sea Salt and Fairway Tellicherry Pepper to taste

    DIRECTIONS

  1. Heat a large pot of water over high heat.
  2. When the water is boiling, add the corn.
  3. After 5 minutes, remove the corn and slice the kernels off of the cob. Be careful, they’re hot!
  4. Place kernels in a bowl and add diced chives, lemon juice, olive oil, salt, pepper.
  5. Next add the tomato and onion.
  6. Mix and adjust seasoning as desired.

Yogurt Sauce

INGREDIENTS

  • 1 cup Greek yogurt
  • 1 scallion, finely minced
  • 1 clove garlic, crushed
  • 2 tablespoons flat parsley, medium chopped
  • 2 drops lemon juice
  • 1 pinch Fairway Sea Salt

    DIRECTIONS

  1. Mix all ingredients together in a small bowl.
