The Margier olive mill was established in 1650 and has enjoyed icon status among the French. Situated in Auriol, a town in Provence, this extra virgin oil is carefully extracted from a deliberately balanced blend of sun-ripened olives to produce a superior extra-virgin olive oil. Golden green, this is an intense oil, boasting the verdant flavors of fresh-cut Provencal herbs like thyme and rosemary, which grow wild in the region. This is a pleasantly aromatic, velvety smooth oil with a slightly peppery finish that also the revered A.O.C (Appellation d’Origine Controllee) distinction, which means that this fruit and the oil produced from it must meet strict farming and production standards.
