Hardy olives -- at least 80 percent Aglandau variety combined with other local varieties -- resistant to cooler temperatures and drought are grown in Manosque, situated in the southwestern region of France. They yield a fine, unfiltered, sumptuous extra-virgin oil that is greenish-amber in color, and herbaceous and slightly bitter with an intense fruity aroma containing hints of raw artichoke, too. This EVOO also carries the treasured A.O.C (Appellation d’Origine Controllee) distinction, which means that it meets strict farming and production standards set by the French government.
Drizzle this on pasta, or use it in seafood dishes featuring shrimp and scallops. Pour it onto root vegetables and asparagus before roasting, or try it on fresh raw salads. This oil suits all cooked or raw vegetable-based preparations.
