INGREDIENTS
- 1 lb top round London Broil, trimmed
- 3/4 cup panko (Japanese bread crumbs-found in bread crumb aisle)
- 1 tablespoon fresh thyme leaves
- 1˝ tablespoons Dijon mustard
- 2 cloves garlic
- Olive oil spray
- Fairway Sea Salt and Fairway Tellicherry Pepper to season
DIRECTIONS
- Arrange oven rack on top position. Preheat oven to 450 degrees.
- Fit a baking or roasting pan with a wire rack.
- Mix panko and thyme on a plate.
- Season both sides of London broil with salt and pepper.
- Combine the mustard and garlic in small bowl and coat the London Broil with the mixture.
- Then coat the meat with the panko/thyme mixture, pressing the crumbs into the meat so that they stick. Discard the remaining crumbs.
- Place the meat in the roasting pan and coat the top and sides thoroughly with olive oil spray.
- Roast 16-18 minutes for medium doneness or until crumbs are golden and desired doneness is reached. If the crumbs begin to brown too much, cover the meat loosely with foil.
- Remove from oven and let stand 10 minutes.
- Slice into thin strips and serve.
