Olive oil maker Jose Antonio Luque runs a unique family grove in Cordoba, a southern region in Spain, widely known for producing some of the world’s best olive oils. Diligantly tending to his young trees -- none older than twenty years, and each planted and grown under strict certified organic regulations -- Luque is fanatical about producing high quality organic olive oil, and this particular bottle is truly special. Instead of being pressed, the olives are crushed by granite stones and then placed in a wire mesh strainer so that the oil ("Flor de Aceite" or "Flower of the Oil") drips out naturally rather than being forcefully expelled. The result is a sumptuous vegetal oil with a full body, featuring delectable fruity tones, verdant, ripe flavors and citrus aromas.
Use this olive oil raw on salads and in vinaigrettes or as a dip for fresh bread. Drizzle it onto pasta before adding garlic and salt, or try it on slices of fruit and cheese.
