Painstakingly pressed to expel flawless oil, this extra-virgin olive oil features the robust flavors, typical of Tuscan oils, hinting at green artichoke, and tomato, with tantalizing notes of dried fruit dancing over a deep bitter tone, yielding to a slightly bitter and spicy piquancy. This is a D.O.P. product, which stands for Denominazione di Origine Protetta, or Protected Denomination of Origin -- a certification of quality that meet strict production standards.
