Matzo Brei (Fried Matzo)

Serves: 4

INGREDIENTS

  • ˝ pound matzo
  • 1 cup boiling water
  • 6 eggs, beaten
  • 1 tablespoon Fairway Sea Salt
  • 25 cracks fresh Fairway Tellicherry Pepper
  • 4 tablespoons canola oil
  • jelly to taste
  • maple syrup to taste

DIRECTIONS

  1. Add the boiling water and let it sit for 5 minutes.
  2. Mix in the eggs, salt and pepper.
  3. In a heavy pan, heat the canola oil until it is just short of smoking.
  4. Add the matzo mixture and let it sit for 3-4 minutes or until it turns brown with a nice crust. It should take the form of an omelet.
  5. Flip it over, let it sit for 2-3 minutes more and then break it up.
  6. Place it on a warm plate and serve with jelly and maple syrup.
