Our cows are mainly fed grass on Amish farms in Pennsylvania. They're only fed some grain in the winter to maintain their nutritional needs. Since we're farming with nature, it guides our agricultural practices, because we're committed to providing you with this high-quality product, sourced from local farms, while nurturing the cows and the pastures they graze on. Although research on how milk from grass-fed cows differs from cows that don't graze on pastures is on-going, and there isn't conclusive evidence that nutritionally grass-fed milk is superior, it does seem to have higher levels of certain fats (such as alpha-linolenic acid, an omega-3 fatty acid, as well as conjugated linoleic acid, an omega-7 fatty acid) that may provide health benefits.

When you buy Fairway's Organic Milk, you're getting dairy from farms in rural Pennsylvania that are small -- the largest of them milks about 175 cows, with many of the farms typically milking around 50 cows. In our stores, you'll find two types of Grade A, USDA-certified Fairway Organic Eggs those in recyclable cardboard cartons make of 100% reclaimed paper and those in plastic cartons (both sold by the dozen) - with the best prices around when compared to other organic eggs sold in tri-state area supermarkets. Here's the lowdown on our fresh selections:

• The Fairway Organic Eggs in the cardboard cartons are brown and are only available in the extra-large size. In addition, they contain 225 mg of omega-3 fatty acids per egg, and are a good source of vitamin E, a nutrient that acts as an antioxidant and plays roles in various bodily processes, including immune function.
• The Fairway Organic Eggs that come in the plastic cartons are also brown and are available in large and extra-large sizes, but they don't contain omega-3 fats.

• There are Fairway-label, non-organic, white eggs in plastic cartons that contain 325 mg of omega-3 fats per egg, and are also 96% saturated-fat free. In addition, they're enriched with lutein, a nutrient that has been shown in studies to reduce the risk of chronic eye diseases, as well as being a high source of vitamin E.
