INGREDIENTS
- 3 Idaho potatoes, peeled
- 1 stick clarified butter
- Fairway Sea Salt
- Fairway Tellicherry Peppercorns
DIRECTIONS
- Preheat oven to 350 degrees.
- Slice potatoes into 1/8 inch rounds.
- Heat an 8" heavy, oven-safe frying pan on top of stove over a medium flame. The pan should also have an oven-safe cover.
- Place first piece of potato in center of pan, continue to add pieces of potato in circular pattern, making sure the potatoes overlap. (This is important because overlapping is what ensures the whole dish stays together.)
- When the first layer is in the pan, add 1 tablespoon of clarified butter, a pinch of sea salt, and 1 turn of cracked fresh pepper. Repeat until the pan is ˝ full.
- Place the cover on top of the potatoes. Place in the middle of the oven. Cooking time is about 45 minutes.
- Midway, remove from oven and place on stove. Gently press down over the entire top of the cooking. When the dish is ready it will move freely from side to side off the bottom of the pan.
- Pour off any excess butter, invert onto plate and add salt.
