INGREDIENTS
- 1 16-17 pound prime rib roast
- 3/4 cup Fairway kosher salt
- 1 tablespoon Fairway black pepper
DIRECTIONS
- Liberally rub the fatty side of the roast with salt and pepper.
- Place the roast in a roasting pan, and put in a 450-degree oven and roast for 30 minutes.
- Lower the temperature to 375 degrees and cook for 15 minutes per pound for medium rare (for 4 to 4 ¼ hours, or until the thickest part of the meat reaches an internal temperature of 145 degrees when sing a meat thermometer).
- Take out of the oven and let sit for 20-30 minutes.
- Place on a cutting board (one with a well to catch any running juice) and carve.
