INGREDIENTS
- 2 cups Martin Farms’ fresh-cut butternut squash (cut pieces into small, 1/2-inch cubes)
- 2 tablespoons Fairway Extra Virgin Olive Oil
- Fairway kosher salt
- Ground Fairway black peppercorns
DIRECTIONS
- Add extra virgin olive oil to a large, preheated, oven-safe pan.
- Saute cubed squash on high heat for 2 to 3 minutes.
- Place the pan in a preheated 425-degree oven and roast for 10 to 15 minutes, or until tender.
- Take out of the oven, plate, and add salt and ground pepper to taste.
Chef's Note: This is one sweet dish that’s healthy for kids. If they want to stack the roasted, cubed squash, after it’s cooled, let them. The more fun they have with food, the more likely they’ll try something new.
