INGREDIENTS
- 1 2.5 pound piece of center-cut cod fillet
- 3-4 tablespoons Fairway extra virgin olive oil
- 1 tablespoon Fairway Herbes de Provence
- 3 pinches Fairway sea salt
- 1 pinch Fairway pepper
- 1 lemon, sliced in 1/2-inch thick rounds
DIRECTIONS
- Drizzle olive oil on a baking sheet, and place cod on it.
- Sprinkle olive oil on the cod, and then add the salt, pepper, Herbes de Provence, and lemon juice from 1 slice. Place the remaining lemon slices around the fillet.
- Put in a preheated 450-degree oven, and roast for 20-25 minutes, turning once.
- Plate and finish with olive oil and salt to taste.
