Roasted Cod Provencal

Serves: 4-5

INGREDIENTS

  • 1 2.5 pound piece of center-cut cod fillet
  • 3-4 tablespoons Fairway extra virgin olive oil
  • 1 tablespoon Fairway Herbes de Provence
  • 3 pinches Fairway sea salt
  • 1 pinch Fairway pepper
  • 1 lemon, sliced in 1/2-inch thick rounds

DIRECTIONS

  1. Drizzle olive oil on a baking sheet, and place cod on it.
  2. Sprinkle olive oil on the cod, and then add the salt, pepper, Herbes de Provence, and lemon juice from 1 slice. Place the remaining lemon slices around the fillet.
  3. Put in a preheated 450-degree oven, and roast for 20-25 minutes, turning once.
  4. Plate and finish with olive oil and salt to taste.
