Roasted Spaghetti Squash

Serves 4-6

INGREDIENTS

  • 2 whole spaghetti squash
  • 6 tablespoons cold butter
  • Pinch of kosher salt
  • 2-3 cracks of Fairway Tellicherry Pepper

DIRECTIONS

  1. Place both spaghetti squashes in 350 degree oven for 1/2 hour.
  2. Remove and cut in half lengthwise. Place on sheet pan flesh side down and cook for 1/2 hour more. The meat of the spaghetti squash will become tender.
  3. Scoop out the meat of the squash with a large spoon into a medium sized bowl.
  4. Add 6 tablespoons cold butter, a pinch of kosher salt and 2-3 cracks of fresh black pepper to the bowl. Mix to blend the butter.
  5. Spoon out onto a plate.
