Roman Style Spinach

Serves: 4

INGREDIENTS

  • 2 pounds spinach
  • 1 Vidalia onion, small dice
  • 2 tablespoons Fairway EVOO
  • 1/3 cup golden raisins
  • 3 grates of fresh lemon zest
  • Fairway Sea Salt and Fairway Tellicherry Pepper to taste

DIRECTIONS

  1. Heat the olive oil in a heavy pan over medium heat.
  2. Add the onions and turn the heat down to low.
  3. Cook for 3-4 minutes until they become translucent. Do not brown.
  4. Add the spinach and raise the heat to high.
  5. Cover the pan with a lid and steam for 1-2 minutes, tossing the spinach halfway through. Uncover, add the raisins, salt and pepper and mix.
  6. Add the lemon zest and serve immediately.
