INGREDIENTS
- 2 pounds spinach
- 1 Vidalia onion, small dice
- 2 tablespoons Fairway EVOO
- 1/3 cup golden raisins
- 3 grates of fresh lemon zest
- Fairway Sea Salt and Fairway Tellicherry Pepper to taste
DIRECTIONS
- Heat the olive oil in a heavy pan over medium heat.
- Add the onions and turn the heat down to low.
- Cook for 3-4 minutes until they become translucent. Do not brown.
- Add the spinach and raise the heat to high.
- Cover the pan with a lid and steam for 1-2 minutes, tossing the spinach halfway through. Uncover, add the raisins, salt and pepper and mix.
- Add the lemon zest and serve immediately.
