Salisbury Steak

Serves 4-6

INGREDIENTS

  • 3 lbs ground chuck
  • 6 Spanish onions, sliced thinly
  • 2 teaspoons Fairway Extra Virgin Olive Oil
  • 1 cup plain bread crumbs
  • 3 large eggs
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon mustard powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 2 cups of beef broth
  • 2 tablespoons flour
  • 1/2 cup ketchup

DIRECTIONS

  1. Sauté the sliced onions in the olive oil for 30-40 minutes over a medium heat until caramelized.
  2. While the onions sautéing, place the ground chuck in a mixing bowl.
  3. Add the bread crumbs, eggs, Worcestershire sauce, salt, pepper and mustard powder to the chuck and mix for two minutes.
  4. Shape the mixture into 8 flat oval patties.
  5. Heat a heavy pan on medium heat, and place the patties in the pan. You don’t need any oil in the pan because there is enough fat in the meat.
  6. Brown well on both sides.
  7. While the patties are browning, place the beef broth, flour and ketchup into a mixing bowl and blend together.
  8. Remove the patties from the pan
  9. Add the beef broth mixture to the onions and bring to a boil for three minutes.
  10. Put the patties back into the pan with the onions and sauce and let it simmer for 20 minutes.
  11. Serve the Salisbury Steak with the onions and sauce.
Chef’s Note: Mashed potatoes are the best side dish for Salisbury Steak.
