Sausage with Peppers and Onions

Serves: 2 to 4

INGREDIENTS

  • 2 tablespoons Fairway Extra Virgin Olive Oil
  • 4 Fairway Italian sausage links (sweet or hot)
  • 1 green bell pepper, sliced into 2- to 3-inch long strips
  • 1 red bell pepper, sliced into 2- to 3-inch long strips
  • 1 bell pepper of another color (yellow or orange), sliced into 2- to 3-inch long strips
  • 1 sweet or yellow onion, sliced into 1/4-inch half moons
  • Fairway kosher salt to taste
  • 4 garlic cloves, sliced into slivers
  • 1 15-ounce can crushed tomatoes
  • 1 tablespoon Fairway dried oregano

DIRECTIONS

  1. Heat olive oil in a large pan over medium heat.
  2. Add sausages, and brown them slowly while turning them occasionally for several minutes, or until brown on all sides. Then set them aside.
  3. Increase heat to high, and add onions and peppers.
  4. Toss in pan to coat with oil, stirring occasionally.
  5. Once the onions and peppers are soft, sprinkle with salt.
  6. Then sear them, and once they're brown, add the garlic, and cook for one more minute.
  7. Add crushed tomatoes and dried oregano, and stir well to combine.
  8. Put the cooked sausages back in the pan.
  9. Bring to a simmer, then reduce the heat to low.
  10. Cover the pan, and simmer until the peppers are soft and the sausages are cooked through, about 20 minutes.
