INGREDIENTS
- 2 tablespoons Fairway Extra Virgin Olive Oil
- 4 Fairway Italian sausage links (sweet or hot)
- 1 green bell pepper, sliced into 2- to 3-inch long strips
- 1 red bell pepper, sliced into 2- to 3-inch long strips
- 1 bell pepper of another color (yellow or orange), sliced into 2- to 3-inch long strips
- 1 sweet or yellow onion, sliced into 1/4-inch half moons
- Fairway kosher salt to taste
- 4 garlic cloves, sliced into slivers
- 1 15-ounce can crushed tomatoes
- 1 tablespoon Fairway dried oregano
DIRECTIONS
- Heat olive oil in a large pan over medium heat.
- Add sausages, and brown them slowly while turning them occasionally for several minutes, or until brown on all sides. Then set them aside.
- Increase heat to high, and add onions and peppers.
- Toss in pan to coat with oil, stirring occasionally.
- Once the onions and peppers are soft, sprinkle with salt.
- Then sear them, and once they're brown, add the garlic, and cook for one more minute.
- Add crushed tomatoes and dried oregano, and stir well to combine.
- Put the cooked sausages back in the pan.
- Bring to a simmer, then reduce the heat to low.
- Cover the pan, and simmer until the peppers are soft and the sausages are cooked through, about 20 minutes.
