Sweet and Sour Meatballs

Serves 4

INGREDIENTS

  • 4-12oz cans tomato sauce (not paste, not plum tomatoes)
  • 4 eggs
  • 4-5 tablespoons sugar
  • 2 lb ground beef
  • 2 garlic cloves
  • 1/2 lb white bread
  • Milk to soak the bread
  • Juice from 1 lemon
  • Corn oil
  • Fairway Sea Salt and Fairway Tellicherry Pepper to taste

DIRECTIONS

  1. Soak the bread in enough milk to saturate. Squeeze out the excess milk.
  2. Place the soaked bread, eggs, and garlic in a food processor and blend for 1 min.
  3. Add a pinch of salt and 6 cracks from your pepper mill.
  4. Place the ground beef in a mixing bowl and add the bread and egg mixture. Mix for 2-3 minutes but be careful not to over mix.
  5. Work the meat mixture into balls.
  6. Heat a heavy pan over medium heat.
  7. Add the corn oil.
  8. Brown the meatballs on all sides.
  9. When brown, remove them from the pan and place them on a plate.
  10. Heat the tomato sauce in a large enough saucepan to hold all of the meatballs.
  11. Add the meatballs to the hot sauce and let cook for 30-40 min slowly over low heat.
  12. Add the fresh lemon juice and sugar to your liking. You can also use brown sugar if you prefer. The sauce should be on the thin side.
  13. Serve and enjoy!
