Serves 4
INGREDIENTS
- 4-12oz cans tomato sauce (not paste, not plum tomatoes)
- 4 eggs
- 4-5 tablespoons sugar
- 2 lb ground beef
- 2 garlic cloves
- 1/2 lb white bread
- Milk to soak the bread
- Juice from 1 lemon
- Corn oil
- Fairway Sea Salt and Fairway Tellicherry Pepper to taste
DIRECTIONS
- Soak the bread in enough milk to saturate. Squeeze out the excess milk.
- Place the soaked bread, eggs, and garlic in a food processor and blend for 1 min.
- Add a pinch of salt and 6 cracks from your pepper mill.
- Place the ground beef in a mixing bowl and add the bread and egg mixture. Mix for 2-3 minutes but be careful not to over mix.
- Work the meat mixture into balls.
- Heat a heavy pan over medium heat.
- Add the corn oil.
- Brown the meatballs on all sides.
- When brown, remove them from the pan and place them on a plate.
- Heat the tomato sauce in a large enough saucepan to hold all of the meatballs.
- Add the meatballs to the hot sauce and let cook for 30-40 min slowly over low heat.
- Add the fresh lemon juice and sugar to your liking. You can also use brown sugar if you prefer. The sauce should be on the thin side.
- Serve and enjoy!
