Sweet Chile-Lime Shrimp

Serves: 2 to 3

INGREDIENTS

  • 1 pound extra large (about 16 to 20) peeled and deveined shrimp
  • 1/2 jar Fairway Italian red chile paste
  • 4 ounces Mirin (sweet cooking rice wine)
  • 1 lime, halved, and juice half the lime
  • 2 ounces brown sugar
  • 2 tablespoons Fairway honey
  • 1 teaspoon Fairway sea salt
  • 1/2 bunch of scallions, chopped (only the white part)

DIRECTIONS

  1. Mix chile paste, Mirin, lime juice, brown sugar, honey, and salt in a mixing bowl.
  2. Add shrimp to the mixture and toss.
  3. Marinate for 30 minutes.
  4. Place shrimp and sauce on a baking sheet.
  5. Broil shrimp for 12 to 15 minutes until the tails have blackened a bit.
  6. Remove from oven, plate, and garnish with chopped scallions, and the remainder of the lime cut into half-moon slices.
