Roman Spinach

Ingredients

  • 2 lbs Baby spinach (washed)
  • 3 tbsp golden raisins
  • 1/4 cup pine nuts
  • 1/4 cup Fairway extra virgin olive oil
  • 1 ea. garlic clove smashed
  • sea salt (to taste)

Directions

  1. 1Pre-heat a medium sauté pan to medium-high heat. Add olive oil to sauté pan.
  2. 2Add in spinach and stir until slightly wilted. Add in crushed garlic and sauté for another 2 minutes.
  3. 3Toss in pine nuts and golden raisins and remove from heat. Season with salt to taste.
