There are foods that are timeless, and are unaffected by trends, bringing on a sense of nostalgia and offering absolute comfort -- this jam is one of those foods. But as an apricot-rhubarb spread, it puts a fresh spin on the tried-and-true strawberry-rhubarb pairing, while still providing the sweet and tart taste that anyone would crave. And none other than La Trinquelinette is making it for you. This is the confiturier (French for jam maker) that sells the jams Parisians serve in coffee houses and in bakeries throughout the city. Be grateful that Bernard Berilley started to make this jam in 1978, or you would have never been exposed to its greatness. It's made in small batches in the Trinquelin village, in the hamlet of Saint-Leger-Vauban, near Quarre-les-Tombes, west of Burgundy.
