2 cup long grain white rice
1 1/2 cups shredded Cheddar cheese
1/4 cup milk
2 cups broccoli florets, steamed
2 cups chopped, cooked chicken
1/2 cup bread crumbs, toasted
Directions

1. Preheat oven to 350ºF.

 

2. Prepare rice according to package directions. Transfer to a large bowl.

 

3. Fold cheese into hot rice and stir to combine. Add milk and blend well. Fold in broccoli and chicken.

 

4. Pour mixture into a 2-quart, ovenproof casserole dish. Top with breadcrumbs.

 

5. Bake for 10-15 minutes until top is beginning to brown and dish is heated through.

 

Recipe Tips If you’re all out of Cheddar, try this dish with mozzarella, Gouda, fontina or another favorite cheese. To toast bread crumbs, heat 1/2 tablespoon of olive oil in a medium skillet over medium-high heat. Add bread crumbs and toast, stirring frequently, until golden brown, about 5 minutes.
