
1. Preheat oven to 350 F and line a baking sheet with parchment paper. Toss olive oil with tomatoes and spread on the baking sheet. Bake for 30-40 minutes, or until soft. In the last 20 minutes of roasting, add the Spinach Egg White Frittatas to the oven to cook. In the last 10 minutes of roasting, toast your bread slices.
2. Mash avocado with lemon and salt and set aside.
3. Dice cooked Frittatas into bite sized pieces.
4. Spread avocado on top of toast. Top with roasted tomato and Frittatas. Drizzle with lemon, balsamic, and olive oil. Sprinkle Everything but the Bagel Seasoning and sea salt on top and enjoy!
