Ingredients
2 zucchini, sliced into coins
2 yellow squash, cut into coins
1 large red onion, roughly chopped
2 bell peppers, cored and cut into 2-inch pieces
1 pint Bowl & Basket cherry tomatoes
2 tbs Bowl & Basket Specialty Peri Peri Spice
1 tbs Bowl & Basket Olive oil
Directions
  1. Preheat the grill to 400 degrees.
  2. While grill is preheating, toss vegetables with olive oil and peri peri spice until well coated.
  3. Place in grill basket (or alternatively, make a foil packet) and grill for 15 minutes, stirring every few minutes to ensure all vegetables get grilled evenly.
  4. Remove from grill and serve!
