Sausage and Sweet Potato Breakfast Hash

1. Preheat oven to 400 °F.
2. Using large, oven safe skillet over medium heat, add 1 tablespoon olive oil. Add diced sweet potatoes, cook until tender, about 5-7 minutes. Remove from skillet, set aside.
3. Using the same skillet, cook sausage for 2 minutes on each side. Remove from pan and chop. Set aside.
4. Add 1 tablespoon of oil to skillet. Add onions, garlic, and peppers. Stir for 2 minutes. Add paprika. Cook and stir for another minute until tender. Season with salt and pepper to taste.
5. Add sweet potatoes and sausage to skillet. Toss everything together for 1-2 minutes.
6. Turn off heat. Make 4 indentations to make room for eggs. Crack an egg in each pocket, transfer skillet to oven and bake for 10-15 minutes until eggs are set and cooked to your liking.
7. Remove from oven. Garnish with optional toppings and serve ( avocado, cilantro, or jalapeno ).
Note: You may skip the oven and cook it completely on your stove-top. Just make sure you set the heat to low to prevent the potatoes from burning and cover the skillet so the eggs cook faster.
