Shrimp with Feta and Orzo

Ingredients
1 box orzo pasta
2lb Bowl & Basket Shrimp, thawed, peeled and deveined
1 tsp salt, plus more to taste
½ tsp pepper, plus more to taste
¾ tsp Bowl & Basket paprika
¾ tsp Bowl & Basket oregano
¼ cup Bowl & Basket Olive oil, divided
1 pint Bowl & Basket Cherry tomatoes, halved
4 oz Bowl & Basket Specialty Feta cheese, crumbled
¼ cup lemon juice
¼ cup chopped fresh Parsley
Directions
- Pat shrimp dry and toss with salt, pepper, oregano and paprika. Set aside.
- In a large pot of salted water, cook pasta according to package directions. Drain.
- While pasta is cooking, heat 2 tbsp oil in a large skillet over medium heat. Add shrimp and cook until opaque, about 3 minutes per side. Remove from the pan. Add remaining oil and cherry tomatoes, season with a little salt and pepper and saute for 3 minutes or until softened. Return shrimp to the pan along with cooked orzo, feta cheese, lemon juice and parsley and toss to combine.
- Serve warm.
