Sugar Cookie Truffles

Ingredients
1 package (16.5 ounces) refrigerated sugar cookie dough
1/2 (8-ounce) package Neufchâtel cheese
1 package (11 ounces) white chocolate chips
1 tablespoon vegetable oil
2 tablespoons holiday colored nonpareils such as green, red and/or white
Directions
  1. Line rimmed baking pan with parchment paper. In mixer, beat sugar cookie dough and cheese on medium speed 1 minute or until a smooth dough forms. Using 2 small spoons, drop dough by heaping tablespoons, 2 inches apart, onto prepared pan; freeze 15 minutes.
  2. With hands, roll dough pieces into balls and place on same pan; freeze 30 minutes.
  3. In medium, microwave-safe bowl, heat chocolate chips in microwave oven on high 1 1/2 minutes or until melted, stirring every 30 seconds; stir in oil. With 2 forks, dip balls into melted chocolate mixture to completely cover, allowing excess to drip off; place on same pan and immediately sprinkle with nonpareils. Reheat melted chocolate mixture as necessary if it begins to harden. Refrigerate truffles 10 minutes or until chocolate hardens. Makes about 20 truffles.
