4 pounds brisket (Trimmed)
1 quart beef stock
1 medium Spanish onion (chopped)
4 celery ribs (chopped)
1 large carrot (chopped)
2 shots of espresso
1 cup ‘Brisket mix’
Directions
1. Rub each side down with the ‘Brisket Spice Mix’
2. Sear in a medium hot pan until all sides are golden brown & the sugar from the mix has caramelized
3. Medium hotel pan or steam table pan add the seasoned brisket, carrots, onions, beef stock & espresso
4. TIGHTLY seal the pan with aluminum wrap, 2x.
5. Cook at 350F for 2hrs
